A recent survey in South Central Los Angeles showed that within a two-square-mile area there are 52 fast-food establishments, one sit-down restaurant and one supermarket. The market offered a poorer quality of meat and produced compared with that of middle-class neighborhoods. This is not just a private-sector issue. The problems need to be addressed by community-development and public-policy agencies as well.
